Russian crepes recipe

Crepes anyone?? In Russia we LOVE crepes. We often make them for breakfast (just like American pancakes!). We don’t add sugar to the dough so they can be sweet or savory – add Nutella, sweetened condensed milk, strawberry or fig jam, sour cream (just not everything at once! 🙂 ), fruits and berries for the best dessert.

OR add cheese, mushrooms, or mashed potatoes, wrap the filling in and fry on a pan with some butter for a minute. Using crepes sort of like tortillas!

That’s my favorite go-to recipe! For sweet crepes I love using oat milk with vanilla flavor (then I don’t add extra vanilla extract), or vanilla almond milk!

You’ll need:

  • 2 cups of milk
  • 3 eggs
  • 1.5 cups of flour
  • 1 stick of butter
  • For sweet crepes – 1 tsp of vanilla extract

Instructions:

1. Whisk together eggs and 1/2 of milk, gradually adding the flour and the rest of the milk until your batter is smooth (or just mix together in a blender).

2. Using a scoop, put about 1/2 cup of batter into a non-stick pan and turn it sideways so the batter covers the whole surface of the pan. In about half a minute, turn the crepe over.

3. Transfer to a plate and grease the crepe with butter. Repeat with each crepe. I use 2 pans at once to get it done faster. Add your favorite toppings or fillings and enjoy!
