Almond chocolate chip cookies

Cookies time! Who doesn’t love chocolate chip cookies?? I have a few favourite recipes and here’s one of them! I’ve made a twist to a traditional chocolate chip by adding almond flour and almond butter – here’s how it came out! I also love using coconut sugar for my cookies because it smells just like cookies should smell to me and it adds great flavour to my cookies. Also, it’s much healthier than cane sugar (not to mention refined sugar!).

So, to the recipe!

You’ll need:

Flour 1.5 cup

  • Almond flour 0.5 cup
  • Almond butter 2 tbsp
  • Coconut sugar 0.5 cup
  • Butter 1.5 sticks
  • Chocolate chips – as much as you want, I add about 2 cups
  • Eggs 2
  • Vanilla 1 tbsp
  • Baking powder 1 tbsp

Instructions:

1. Using a mixer, mix together softened butter, eggs, sugar, almond butter, vanilla. In a separate bowl mix together all dry ingredients and gradually add to the main bowl, mixing it all, then add chocolate chips.

2. Make dough balls and place them on a parchment paper and then refrigerate for 15 minutes before baking.

3. Bake in preheated to 350° oven for 10-15 minutes (for big cookies). That’s it! Transfer them to a cooling rack and then enjoy
