Russian eggless Honey Cake recipe
This is the recipe of an amazing cake from Milinda’s birthday party! That’s a traditional Russian honey cake – my favorite! I used to have it for all holidays when I was little. It’s eggless as we are vegetarian and don’t eat eggs – but it works great!
For the layers you’ll need
- 17 oz flour,
- 10 oz honey,
- 3 oz sour cream,
- 7 oz butter,
- baking powder or baking soda.
For the cream (icing) I used
- sour cream
- sweetened condensed milk
Directions:
Melt the butter, mix it with honey and sour cream, add baking soda. Then add the flour and make the dough. Split it into 10 pieces (depending on the size of your pan) and form thin layers as you would do for pizza crust. Bake around 4 minutes. Make crumbs out of one layer to put them over the cake.
Mix sour cream with condensed milk for the cream and put the cake together putting as much cream as possible. Leave in the fridge overnight. Enjoy!

- 300 гр мёда,
- 100 гр Ñметаны,
- 200 гр маÑла,
- 1 чл Ñоды (в оригинальном рецепте, но коржи пахли Ñодой в итоге – лучше положить меньше).
Ð”Ð»Ñ ÐºÑ€ÐµÐ¼Ð° Ñ Ð¸Ñпользовала
- Ñметана
- Ñгущенка
но был жидковатый, даже не знаю какой крем лучше был бы. Ð’ разных вариациÑÑ… видела Ñамодельные взбитые Ñливки или уваренную Ñметану, но не решилаÑÑŒ Ñама делать 🙂 Еще можно Ñоединить вареную Ñгущенку и гуÑтую Ñметану, тогда крем должен быть более гуÑтой.
МаÑло раÑтопить на маленьком огне, Ñмешать Ñ Ð¼Ñ‘Ð´Ð¾Ð¼ и Ñметаной, добавить Ñоду, вÑыпать муку и замеÑить теÑто. Поделить его на 10 чаÑтей (в завиÑимоÑти от размера формы), выпекать минут по 5. Один коржик размÑÑ‚ÑŒ в крошку Ð´Ð»Ñ Ð¾Ð±Ñыпки. Ðу и Ñобрать тортик.

Hi!! Thank you for checking my blog! I used 1 teaspoon of baking powder but it usually depends on the brand you use – just check the directions on the package, it might be different from mine. And for the frosting I normally do 1:1 but it also depends on your taste and the sweetness you want to get. Hope you enjoy your cake! 🙂
